The faster you are, the more points you get.
eating sushi slows you down by 10%, and adds 1000 points to the score.

One thing you could do to make this different to Canabalt would be to have collectables on the buildings, such as ones that increase speed, decrease speed, or launch you up or into a 'flying' mode

I had a lot of problems with the boss on the third level, but after I got the flaming hairball, it was a piece of fishcake. 4/5

If I understand it right, there are 2 objectives in this game: running the longest distance and eating as much sushi as we can. So you could add in the score these informations: the distance we've run through and how many sushi we've eaten.
there are high score tables for both of these statistics. The final score is a sum of them.
